One of our first brewing raptures was a rare Belgian beer in the nearly extinct Grisette style. Grisette comes from almost the same regions as the classic Belgian saison, but unlike its relative, it has a much lower degree, as well as a more “industrial” history of consumption: if the legend of the saison is the beer of the farm workers, then the grisette is a miner’s drink, capable of quenching thirst after hard work underground. Our take on this style isn’t exactly canon, as this time we’ve added an interesting combination of new wild American Sabro and YQH-1320 hops. The highly aromatic southern Sabro from New Mexico and the restrained northern YQH-1320 from Idaho combine perfectly in a light, dry ale with bright spice aromas and create a truly mythical drink.
