Our Suchaviej series is that kind of experiment where you push the boundaries of the style to it’s ultimate top. Here, we try to make the beer as much resembling sparkling wine as possible. We sour the wort and ferment it to absolute dryness to get that wine-like body, and for the hopping we use the most winey hops. This time we once again used German Hallertau Blanc, which is all about grape leave, gooseberry and black currant – much like a real Sauvignon Blanc. But, as if this was not enough for us, we blended in some real white grape juice and topped up the ABV to the wine levels. We get notes of fruity German summer wines, citrus rind, rose orchards, some dried fennel, while high carbo and absolute dryness make you want to pop the cork open with a festive chant.
