Berliner Weisse with Raspberry and Thyme
When creating our new Berliner Weisse, we decided to use raspberries once again, since its high season and we can use as many fresh berries as our fantasy allows. Juicy and aromatic raspberries fill Imza with a bright smell and sweet ‘n’ sour taste, slightly tart from seeds. To emphasize the summer character of the beer, we decided to add an additional dimension with fresh thyme, which we and our friends foraged in the forest near Minsk. It adds light spicy and tangy notes that combine wonderfully with a sour berry base. Here’s to the last days of warm indian summer!
