We fell in love with the huge and unknown world of wild ales with our first homebrewing experiments, back then only dreaming about opening our own brewery. We searched for different yeast strains, collected microorganisms from different beers all over the planet and even experimented with spontaneous fermentation. As a result of this intriguing and quite complex work we came up with our own blend of yeast, pediococci, lactobacilli and brettanomyces, which we now use in our special Malanka beers. And that’s the way our “Vir” beers are fermented. We brew those ales with aged hops, we ferment them for an extended period of time, we age them for about a year in red wine oak barrels, and finally we referment them in a bottle for several months for that soft and pillowy head of foam. These beers take a lot of time, patience and care, and they are ready when they are ready. We hope you appreciate those beers as dearly as we do. This is a true brewing romance we wouldn’t trade for the world.
