And to make this tasting even more interesting, we additionally hopped our DIPA at the very beginning of fermentation. This addition of hops initiates a process known as biotransformation, where the yeast actively interacts with the various chemical components of the hops, making the appearance more hazy and the taste of our IPA even brighter, with accentuated aromas of melon, guava and a light resinous piney aftertaste.
