The lactobacilli introduced in the beginning of fermentation create more expressive and balanced acidity. The new &#8220;Im\u017ea&#8221; was then blended with juicy raspberries, which gave the beer its outstanding bright pink colour and filled it with a unique smell and sweet&#8217;n&#8217;sour taste. We also added blackberries to the secondary fermentation to emphasize berry tartness and complexity, while a small amount of fresh rosemary brought refreshing piny aromas.
