Our new series Homan is a collection of barrel-aged wild ales that we additionally dry-hopped to get the best drinking experience. And here we used one of the most interesting new-school hops, mysteriously known as HBC 472. It originates from wild neomexicanus hops, and aside from typical aromas of flowers and tropical fruits has a huge woody vanilla backbone. Our house yeast blend of saccharomyces, pediococci, lactobacilli and brettanomyces, red wine barrels, which held the beer for half a year, this wild beautiful hops and then being naturally carbonated in a bottle created the taste unique in it&#8217;s singularity &#8211; dry and funky, hoppy, woody, some vanilla and coconut gellato following, and all that covered by a heavy head of fluffy foam.
