Belgian yest brings a lot more esters and phenols to the aroma of this IPA. And we used Cascade hops this time, because that&#8217;s what classical IPAs smell like, and it is always fun to try to combine those familiar aromas with something new. This beer is all about grapefruit pith, some fresh-cut grass, as well as a little bit of white pepper.
