All our juicy and hazy IPAs usually have only small tweaks in their recipes and differ only in hop varieties and grain bill, depending on the series. But this time, we decided to slightly change the approach to make the session New England IPA more full-bodied and unique. We added lactose, which made the beer richer despite only 3.7% ABV, and fermented the wort with the yeast WLP644 Bruxellensis Trois. For some time this Belgian strain was classified as brettanomyces, since the beer fermented by it has a fruity and astringent character, similar to some wild yeast. This strain feature is great for NEIPA, and we decided to milk it in full. The aromatic hops Citra and Mosaic made the beer even more juicy, bursting with mango, pineapple, lychee and lemon aromas. All together with a velvety hazy base makes this beer your best buddy on hot summer days.
