We were really looking forward to putting our hands on Talus hops – the main debutant of last year. The Hop Breeding Company only began commercialization in 2020. Talus’ closest relative is the outstanding Sabro hops, which comes from wild American hops and has comletely crazy aroma, like nothing we’ve tasted in a beer before. In our new hazy IPA, Talus is all about super pungent rose petal marmalade and some dried sage, a pinch of coconut water, subtle notes of grapefruit and lemon peel, and then, well, some of those juicy citrus popsickles. We’re on a constant road to somewhere here, folks, and we invite you to join us on our journey through the fascinating Neomexicanus Valley.
