New Cyklons are always unusual experiments! So this time we tried several new techniques for us. First of all, we used a yeast strain, common for New England IPA, with the traditional West Coast IPA malt bill and hopping scedule. Second, we fermented the new Cyklon at quite high temperatures (more typical for Norwegian kveik ales and Belgian saisons). Third, we hopped this one in the kettle only with classic American Cascade hops, and for dry hopping we exceptionally used unusual, wild, endemic to the state of New Mexico – Medusa hops. What we’ve got as a result is an interesting hybrid of East and West Coast IPA with an unusual profile, pronounced bitterness and aromas of melon tonic, fragrant rosemary and roasted hazelnuts.
