In pursuit of the new, popular and most modern, it is very easy to miss something so close, so simple, but no less exciting. For our very first German-style pilsner, we used local pilsner malt, the freshest local Saaz hops of the 2021 year harvest from the only farm in Belarus to grow them, and a reliable lager yeast strain from the oldest brewery in the world, straight from the monasteries on the tops of the Bavarian mountains. Open fermentation at low temperatures gave a clean aroma of spring meadow flowers, mild citrus fruits, and two-month lagering allowed these aromas to be carefully weaved into the soft taste of freshly baked bread, slightly mineral, framed by expressive hop bitterness. Unfiltered, crispy and surprisingly drinkable, this lager is our tribute to the people who work to transform beer from a simple set of ingredients brought from all over the world into a real local drink.
