Saison is the style hard to define. The only thing we can say for sure is that it originated in Belgium and its character is largely defined by the yeast. The dry and phenolic profile of this beer twists beautifully with Brettanomyces. In “Pramień”, we used a blend of saison yeast and Brettanomyces, gave the beer more than half a year to form a taste and round up the palate, then sent it to the bottles for a few more months to referment and get those millions of tiny bubbles. This is a comforting beam of light during troubled times, and we hope you enjoy it as much as we do.
