Vir: Abrykos
Wild Ale with Apricot
We continue to work with our beloved wild yeast and long conditioning. The new Vir was aged for almost half a year and has a bright Brett aroma, dry taste with sharp acidity and a pleasant bitterness in the aftertaste. To further bring out that funky aroma we added fresh apricots to the conditioning tank. We did not seek to make a wild and funky milkshake, so the taste of apricots is restrained and is characterized by light notes of stone fruits. Furthermore, we transfered a part of the beer into a barrel, and we will give it even more time, because everything this beer needs is time, oak and love.
