This is a quintessence of a Belgian fruited beer tradition for us, and, for the moment, the closest we could get to it. A wild ale, mashed with a traditional Brussels wheat-heavy grain bill, brewed with aged hops, fermented slow with our house blend of wild yeast and bacteria, then aged for more than a year in an oak wine barrel. Just at the time, when the base beer was at its highest, we transferred it onto juicy and fragrant sour cherries to further age for a couple of months. Bottled, naturally carbonated and aged to refinement, this fruited wild ale showcases a wonderful balance of tart and funky notes, covered with fantastic aromas of ripe fresh cherries and almondy cherry pits. And the color of a ruby gemstone says it all, really. Our delicatre homage to the famous Krieks of Pajottenland, Ladies and Gentlemen!
