Cider Aged in Cognac Barrels

A warm, still very summery autumn has begun, and it is in this velvet season that we are releasing a variety that has been waiting for its time for more than 2 years. This cider, whose story began in the fall of 2022, we made from freshly squeezed juice of Belarusian garden apples and fermented it with a mixture of cider and natural wild yeast. After slow and long fermentation, it went to an oak French cognac barrel, where it rested for more than a year. When our cider reached the perfect balance, filled with the flavors of damp autumn gardens of abandoned manors and the aromas of fresh morning fogs over icy streams, we sent it to kegs and bottles, where it was saturated with sparkling bubbles for another six months. And, finally, its time has come. We’re starting with the draft version of Falvarak, a cider and we hope you’ll like, because we’re sure – good drinks require patience and don’t like fuss.
