Another hyped-up thing – dry and highly carbonized beer, which resembles of champagne. We decided to make our own variation of the style, Suchaviej (“Dry wind”) even more similar to sparkling wine, so not only we fermented it out as much as possible, but also acidified it a little bit and used the Nelson Sauvin hop. This is a New Zealand hop variety, known for it’s unique ability to add the characteristic aroma of white grapes and hints of gooseberry to the beer. It is for the similarity with Sauvignon Blanc grapes that this hops got its name.
The result is a sparkling, strong and extremely dry straw-colored beer with a light haze and all the properties of Nelson Sauvin hops – fragrant and juicy. Cheers!
